Select your favourite
vegetables and cut hard veggies like carrots and potatoes into smaller
pieces, and soft veggies like zucchini, celery, onion or broccoli into
larger pieces.
Over medium to high heat
in a frypan or wok, heat a tablespoon of grape seed oil then stir-fry
a sliced onion, 2 cloves chopped garlic, and 3 tspns grated ginger.
Add
2 tablespoons red or green curry paste and stir through. Next, add
your hard vegetables and cook for a couple of minutes, then cover with a
tin of coconut milk and simmer for 20 minutes with a lid or cover
over the wok. Check that hard vegetables are close to being cooked,
so that they finish off while the soft vegetables cook. Add your
soft vegetables, such as celery, broccoli, zucchini, spinach leaves and
cook for 3 to 5 minutes until bright green (for the greens) and
vegetables are just tender.
Serve immediately with
brown rice, poppadums and chutney. Yum!

May
disappeared before my eyes! I recently returned from the US where
I caught up with one of my teachers, Dr Rosita Rodriguez from Arche
International who has a wealth of knowledge on Levels of
Consciousness. In the US, Rosita regularly flies from Chicage to
Las Vegas to work in the AIDS hospice and train the volunteers who work
there. I encourage you to visit the website and check the monthly
newsletter or teaching which usually has a spiritual message.
I
was also privileged to attend the World Alliance for Quality Conference,
and the American Society for Quality Conference, both held in
Houston. Houston is a beautiful city, and Ken Mattingly (depicted
in Apollo 13 as the astronaut who was grounded due to measles) was a
tremendous hit as one of the key-note speakers.

the home-front, I've become a Grandma twice over! I now have a
beautiful granddaughter Brigit, born 6.5 weeks before my gorgeous
grandson Thomas, so I am feeling pretty lucky. Both babies and
respective
Mums and Dads are doing great!

Simple and Easy Tips to Manage Me!
You
know, don't you, that you can only manage you? You cannot really
manage anyone else, or anything else. It takes you to take care of
you first, before anything else happens.
So,
what can you do to help yourself? Here are my top ten tips!
Begin
the day as you mean to enjoy it! Greet yourself with a hearty
"Good Morning" and wish yourself all the best for the
day. Use positive affirmations. If you had a young child
who was a bit grumpy, you would try and jolly them out of it, so do
the same for yourself.
Nourish
your physical self. Eat breakfast, lunch and dinner today and
every day. Keep portion sizes small, and ingredients
healthy. Make sure you have protein food (meat, fish, chicken,
nuts, legumes, cheese, eggs) and if you are vegetarian, make sure
you mix the protein sources so that you get the right combination of
protein to keep you well-nourished.
Keep
clean in body, mind and soul. Clean body makes you feel good,
eat right and drink 2 to 3 litres of water a day. Clean
thoughts are positive, uplifting and optimistic. Spread love
inside yourself and out for a beautiful soul.
Deep
breathe and meditate with Mindfulness or focused Relaxations and
give your Sub-conscious a stress break.
Move
your body! Shake, rattle and roll your body! Slide, run,
jump, stretch, pilates, yoga or tai chi your body! Every day.
Hug
someone today.
Help
someone today.
Praise
yourself now.
Love
yourself now.
Know
that you can heal yourself and attract a wonderful life to
you. Just bask in that knowledge and always hold on to it.
